The Head of Bars role is ideal for someone seasoned and dynamic, with the versatility to lead and operate a world-class beverage programme for a multi-faceted portfolio of restaurants and bars. 

The Mission:
  • Creating dynamic and diverse cocktail and beverage menus for a wide range of cuisines and concepts that are reflective of current trends, seasonal ingredients, and the unique identify of each venue;
  • Overseeing and executing a robust, well-rounded beverage program that includes coffees, teas, spirit-free beverages, and other specialities, while considering varieties and guest preferences;
  • Continuously exploring new ingredients, techniques, and concepts to keep the beverage program appealing and exciting;
  • Collaborating with the culinary team to create pairings that enhance the overall dining experience;
  • Continuously working towards mastery of mixology techniques, presentation, and creation;
  • Organising and participating in guest shifts, in venue as well as off-site, with industry experts and leaders, facilitating collaborative experiences that showcase talented individuals whilst introducing unique offerings to guests;
  • Ensuring controls are in place and all cocktails meet high standards of quality and consistency;
  • Conducting regular tastings and trainings for the beverage team to maintain and uplift skill levels;
  • Monitoring inventory, analysing financials, and working with the finance team to optimise costs and maximise profitability;
  • Leading and inspiring a beverage team by setting a positive example and fostering a collaborative, supportive, and productive work environment;
  • Occasionally working bar shifts to engage with guests, stay in touch with guest preferences, and build a following;  
  • Acting as brand ambassador, representing and promoting the venues and group;
  • Leading the recruitment of the beverage team, attracting top talent and building a high performing team;
  • Establishing and maintaining strong relationships with suppliers and vendors;
  • Negotiating favourable pricing, terms, and exclusives to maximise profitability;
  • Proactively seeking solutions and ways to improve the team and the business.
What We're After:
  • 10+ years of experience in beverage management and mixology in reputable establishments with compelling beverage programs;
  • In-depth knowledge of wine & spirits and beverage trends;
  • Exceptional leadership and team management skills;
  • Excellent communication and interpersonal skills;
  • Financial acumen to make sound decisions in the best interests of the business;
  • A passion for beverage and mixology, and an incessant drive to never stop learning and improving!
